Peruvian Food: Arroz Chaufa Recipe

PERUVIAN FOOD. The arroz chaufa (fried rice) is a delicious dish of the Peruvian cuisine and we owed it to Chinese people who came to Peru many years ago. Nowadays, we usually found it in different Chinese restaurants of the country, therefore, we give you the recipe for you to enjoy it at home.

- 2 cups of rice
- 250 g (9 oz) of chicken fillet, cooked, cut into pieces of 1 cm (1/2 inch) and brown in oil
- 4 hot dogs
- 8-10 stalks of Chinese onion finely chopped
- ½ red pepper, cut into small pieces
- 3 eggs
- 1 tablespoon of milk
- 2 teaspoons of ginger
- 1 teaspoon of garlic, finely chopped
- Soy sauce to taste
- 1 tablespoon of oil

Preparing the dish:
Prepare rice as you usual do with garlic, water and salt. Beat the eggs slightly, add 1 tablespoon of milk, season them and fry them in a pan with oil. Once the omelet is ready, remove it from the pan and cut into 1 cm (½ inch).
Fry the hot dog over medium heat in a pan without oil until cooked but not crispy. Remove from the pan and drain it on paper towels. In the same oil of the bacon fry the garlic and the ginger. Increase the heat and add the Chinese onions and peppers.
Cook a few minutes. Then add the soy sauce, chicken, omelet cut into pieces and Ajinomoto. Mix all. If it’s too dry, add 1 tablespoon of boiling water.
Finally add the rice and mix well. Serve instantly when it is very hot.
