- 8 pieces of chicken
- ½ cup of oil
- 1 diced medium onion
- 3 minced garlic cloves
- ½ cup of liquefied fresh yellow pepper
- 1 cup of ground coriander
- 2 peppers (1 diced and the other in strips for garnish)
- 3 cups of rice
- 1 cup of peas
- ½ cup of corn kernels
- 2 ½ cup of boiling water
- ½ cup of beer

Preparing the dish:
Season and fry the chicken pieces in hot oil. Remove the chicken pieces. Brown the garlic, onion, pepper and coriander in the same oil.
Place the chicken pieces again, add the beer and continue cooking until the chicken is done.
Remove the chicken pieces, without allowing them to cool. Add the rice, peas, corn and pepper. Mix well.
Add the water, rectify the seasoning and bring to a boil. Reduce heat and continue cooking another 20 minutes until rice is cooked. Serve the rice with the hot chicken pieces and garnish with red pepper strips.
